Mango Salsa

A coworker likes to snack on Ruffles potato chips dipped in cream cheese icing. You might think this is odd, but it's really not - it's actually very good... and addicting. Some of our favorite foods combine contrasting flavors: sweet & sour sauce, chocolate covered pretzels or peanuts, the sweet sauce poured over Fire Station Meatloaf. This mango salsa recipe goes great with meats. My favorite is with baked or grilled chicken thighs.

Ingredients
- 2 ripe mangoes
- 1 small fresh pineapple
- 2 tblspns pineapple juice
- 3 tblspns fresh minced basil
- 4 pieces crystallized ginger, finely minced
- 1 tspn rice wine vinegar
- Grated zest and juice of one lime
- 2 tblspns honey

Preparation
Cut the mangoes into uniform small cubes. This is messy, but fun. Don't eat any! Dice the pineapple into the same size pieces then measure out one cup. Eat the rest of the pineapple, or save for blender drinks! Combine the mango and pineapple in a bowl and add the pineapple juice.
Add the remaining ingredients and stir thoroughly with a wooden spoon. Refrigerate until 2 hours prior to serving time, then remove from fridge and let come to room temp.
That's it!

Karen, probably not too well. Two sweets cancel each other out.. Try it with a meat dish.
Sounds very good. I am a Type 1 diabetic, so Mango is tough, but if I am careful with portion sizes, I am certain this would be delicious. You say meat dishes. I am thinking grilled chicken breast (and I just re-read the hub, so yes.) :-) YUM.
Steph, I see no reason why you couldn't make this with less mango, and yes, it's delicious with grilled chicken. Thighs are my personal favorite. They're juicier
I have developed a new love for mangos....and with chicken, I'm gonna devour it. yummmm I don't know if the mangos are going to make it to the salsa but I'll try....maybe buy 2 and eat one and chop the other. or eat them both, i'm confuzed.
